For some time, I've been suggesting to people who asked that one quick adjustment in IR photos is to swap Red and Green in Photoshop's Channel Mixer. I wasn't happy with my results one day and fiddled more, which took me to the Hue Saturation control. I found that not only is sliding the hue bar to the far left (or right, it's 360 degrees) the same as swapping red and blue in the channel mixer, but you can make adjustments to tweak the color and adjust saturation. It's also faster, so I'm not seeing much point to the channel mixer any more.
Once you have your basic color set up, you can use the Selective Color adjustment to adjust colors to your liking. I use it to adjust foliage to white and darken skies, but there aren't any rules. Play and have fun
